Take It Off: Balsamic Chicken and Vegetables {Week Ten}

Embarrassing as this is, but, before I started Medifast, I didn’t eat many veggies. Strike that. I didn’t eat a variety of vegetables. I was a corn, cucumber, carrot girl. But after being on this weight loss journey for the past ten weeks, I have gotten over my hang ups over certain foods. Instead of saying, “Oh I don’t like that,” I have been giving things a try. After all, if I stuck to my “favorites” {two of which aren’t on plan}, my dinners would be boring. And, if I’m being honest, I wouldn’t be doing as well as I am.

Vegetables have become a huge deal to me. I have been trying different ways to cook them but I keep coming back to one certain thing. Balsamic vinaigrette. It’s my new BFF. I use it on everything. And my most favorite thing? Balsamic Chicken and Vegetables. We eat this at least once a week. At least. It’s so yummy {and easy!}.

Recipe: Balsamic Chicken and Vegetables

Ingredients

  • 3-4 chicken breasts
  • 1/2 green pepper, sliced
  • 1/2 red pepper, sliced
  • 1/2 yellow squash, sliced
  • 1/2 zucchini, sliced
  • handful of cherry tomatoes, halved
  • handful of fresh green beans
  • Balsamic vinaigrette {I just pour it all over!}

Instructions

  1. Slice veggies and arrange in casserole dish {you could also use a roasting pan}. Toss with Balsamic vinaigrette.
  2. Place chicken on top of veggies. Coat with balsamic vinaigrette.
  3. Cook covered in oven at 425 for 30-35 minutes {until chicken is no longer pink}.

It’s seriously that easy!

Starting Weight: 186.2 lbs

Month 1: -13 lbs 
Month 2: -7 lbs
Week Nine: - 1.5 lbs {164.8 lbs!} Total of -21.5lbs! 

Goal Weight: 130-140 lbs

I’m also working on a DietBet Challenge! Our weigh-in is tomorrow night and I am really, really nervous about. Even though, I have lost 8.5 lbs since we started, the weigh-in is at night. I weigh first thing in the morning! This should prove interesting. There’s still time to cheer me on via my cheerboard!

    • It’s so nice to finally see the scale keep going down, down, down. I have never been this successful on any weight loss plan that I have been on before!

    • Being in a funk and being depressed do not help weight loss at all. I know that first hand. You will pull through! I know you will!
