Apple Cider Donuts

Seriously, I do not know what has gotten into me. Not only have I been on a cleaning streak, I have also  been whipping up a lot of baked goods {Chewy Granola Bars and Fudge Brownies to name a few}! Just when I thought I couldn’t top the Fudge Brownies, I out did myself with Apple Cider Donuts.

One of our favorite things to do in the fall is to visit the local farm to pick pumpkins and apples. The highlight of our visit is not picking out the biggest pumpkin or filling our bushel with apples. No, it’s snacking on warm, apple cider donuts.

We haven’t had time to head to the local farm so I decided to search Pinterest and figure out how to make them myself. I don’t have to tell you how many recipes I found { read: a lot}. I really like the recipe below but they were a little more dense than we are used to. But that didn’t stop my family from inhaling them!

Recipe: Baked Apple Cider Donuts

Ingredients

  • 1 1/4 cup flour
  • 1/2 cup granulated sugar
  • 1 1/4 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 3/4 tsp salt
  • 1 cup of apple cider
  • 1/2 cup of buttermilk
  • 1 egg, lightly beaten
  • 2 Tbsp butter, melted
  • cinnamon sugar for finishing

Instructions

  1. Preheat oven to 425°F. Grease mini-donut pan with nonstick cooking spray.
  2. Place apple cider in a small saucepan over medium heat. Bring to a boil, then simmer about 5-7 minutes until liquid is reduced by half. Remove pan from heat and set aside.
  3. In a large mixing bowl, sift together flour, sugar, baking powder, cinnamon, nutmeg, cloves, and salt. Add buttermilk, egg, reduced cider, and butter. Stir until just combined. Fill a plastic baggie with batter, then cut a small hole in the corner of the bag. Pipe batter into each donut cup approximately one-half full.
  4. Bake 4–6 minutes or until the top of the donuts spring back when touched. Let cool in pan for 4–5 minutes before removing.
  5. Finish donuts with cinnamon sugar.

I definitely want to make these again but might try frying them instead. I am sure no one will complain when I say I need to make another batch!
