There are some days {ok , most days} that I dread lunchtime. Trying to come up with new, kid-friendly lunches is a real pain in the you-know-what. I mean, one can only make so many nuggets, PB&Js, and Mac-and-Cheese. Plus, I am trying to get Ethan ready for “big boy school” where the choices for lunch, although varied, will not always be nuggets, PB&Js, and Mac-and-Cheese.
To do this, I have been trying to introduce more sandwiches and hot meals that I know will be offered at elementary school. On my quest for new and healthy lunches, I was introduced to Flatout Hungry Girl Flatbread. It is a great alternative to regular bread with less calories but still has a great taste!
The boys? They love them!
We have tried a few different lunches with the Foldits and have come up with 2 go-to favorites {one cold and one hot}: Tuna Salad and Mini-Pizzas!
I, personally, am I a huge fan of tuna salad with Ben coming in as a close second. Ethan? Not so much! But hey, at least he tried, right?
But the big winner was the Mini-Pizzas. Not surprised at all with that one. In fact, Ethan begged from them again just this week!
Cold Tuna Salad
Is there any other way to eat it? For our sandwiches, I whipped up a quick tuna salad. I top it with some cheese and a little bit of lettuce for an added crunch. Yum!
Hot Mini-Pizzas
Ethan really loved helping make the pizzas. We laid out the Foldits and added a spoonful of homemade sauce and topped with a ton of cheese. We popped it in the oven long enough for the cheese to melt. They were devoured within minutes!
Mini-pizzas will definitely be put into heavy rotation in this house!
