Chocolate Chip Oatmeal Banana Bread

I participated in Mom Blog Tour at the Summer Fancy Food Show on behalf of Wendy’s Bloggers and received McCann‘s Irish Oatmeal® products to facilitate my review.

I don’t know how it happened but the weather has turned the corner. We went from 100+ degree days to barely reaching 80, in a matter of days. It’s as if the weather is prepping us for back to school and for fall. 

One of the things that I have been trying to get together the past few weeks is quick and easy breakfasts for the kids. Something that can be made quickly but will fill them up for their school day. When I attended the Fancy Food Show, I was introduced to McCann’s Irish Oatmeal

Here is where I admit to you that I am not an oatmeal person. Well, scratch that. I wasn’t an oatmeal person. It was a texture thing. I would either make it too watery or too thick. Never just right. Well, the good people at McCann’s Irish Oatmeal helped this Goldilocks find her perfect oatmeal with their microwaveable cups that are quick and easy!

High quality Irish oats are combined with a special blend of ingredients to create a delicious hot breakfast dish, all packaged into a convenient microwaveable single serve container. These are great to grab and go in the morning! But sometimes you need a little something more.

I took our favorite Banana Bread recipe and incorporated McCann’s Irish Steel Cut oats to bulk up our bread! This will keep the boys fuller and get them through their morning at school. 

Chocolate Chip Oatmeal Banana Bread

To make Chocolate Chip Oatmeal Banana Bread, you will need:

  • 1 cup light brown sugar
  • 1 stick unsalted butter, at room temperature
  • 2 eggs
  • 1 tsp vanilla
  • 3 medium ripe bananas, mashed
  • 1 cup McCann’s Irish Oatmeal® steel cut oats
  • 2 cups all-purpose flour
  • 1/2 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup milk
  • 3/4 cup chocolate chips

Preheat the oven to 350 degrees. Spray a loaf pan with non-stick baking spray and set aside.

In a large bowl, beat the brown sugar and butter until combined. Add eggs one at a time. Next, add the vanilla. Finally, add the mashed bananas.

In a medium bowl, whisk together the oats, flour, baking powder, baking soda and salt. Alternately add the dry ingredients and the milk to the mixer.

Pour batter in the prepared pan and sprinkle with a handful of chocolate chips. Bake for 60-70 minutes or until toothpick comes clean. Cool in the pan on a cooling rack for about 20 minutes, then remove it from the pan and allow to finish cooling on the rack before serving.

  12. I like oatmeal with a tab of butter and maple syrup for breakfast in cooler months of the year. It fuels you for the day.

  13. Oatmeal is so great for a snack. I make a big pot early in the week, refrigerate it till need and just scoop it out into bowls, add a little milk, microwave it and top with whatever.

  14. I enjoy oatmeal cooked with milk and sugar. It is so filling, but it is also so good for you.
    Of course, I LOVE oatmeal cookies! I make or buy them quite often.
    Oatmeal has so many uses. I also use it to thicken hamburgers or meatloaf.
