With the upcoming holidays, there will be lots of get togethers with family and friends. One of my favorite get togethers is with my friends. One year, we did a Favorite Things Party where everyone brings, you guessed it, their favorite things! Each year, we try to come up with a different theme or angle. This year? A Girls’ Movie Night In!
Leave the skinny jeans at home and throw on your best yoga pants and hoodie. Skip the mascara because we have a cry fest planned!
Yup, The Notebook. Everyone’s go-to “I just need a good cry” movie.
Now that the theme has been established, it’s time to start planning our snacks. Naturally, popcorn would be the first choice for a movie night but you can’t just have popcorn. It needs to be kicked up a notch. I can’t ever just make something simple!
I love throwing some M&M’s® into my popcorn. It’s just such a great combination.
And that’s how I arrived at Popcorn Cake! It looks fancy. It’s easy to make. And it’s very inexpensive.
You’ll need 12 cups of popped popcorn, 1 bag of marshmallows, 1 stick of butter, 1/2 cup of M&M’s, and 1/3 cup of vegetable oil.
I went with Orville Redenbacher’s Kettle corn. I thought that would be a great combination with the M&M’s®, a little sweet and a little salty. After you have about two popped bags, mix in your M&M’s®. The recipe calls for only a half cup but I got a little crazy and added a full cup (half plain M&M’s®, half Peanut M&M’s®).
Next, heat the oil, butter, and marshmallows in a saucepan over low heat until melted. Pour the marshmallow mixture over the popcorn mixture and combine.
Pour everything into a greased bundt pan and push down gently. Allow your popcorn cake to sit for awhile until it’s cooled. Invert pan onto a plate and remove from pan.
Ta-da! Popcorn cake!
This would be great for any kind of party: birthday, holiday, or your next in home movie night!
- 12 cups popped popcorn
- 1 (1 lb.) bag marshmallows
- ⅓ cup vegetable oil
- ½ cup (one stick) butter
- ½ cup M&Ms
- Spray a bundt cake pan with cooking spray and set aside.
- Pop popcorn and place into a large mixing bowl with M&Ms. Heat the oil, butter, and marshmallows in a saucepan over low heat until melted. Pour marshmallow mixture over popcorn mixture and combine.
- Press popcorn mixture into the angel food or bundt pan.
- Allow to sit for awhile until cool. Invert pan onto a plate and remove from pan.
- Invert pan onto plate and remove the cake from pan.
