With the holidays ramping up, a lot of us are planning our holiday baking or holiday menus. Between Thanksgiving and Christmas and everything in between, there is a lot of food to go around.
And while you may not want to think about dieting or eating right, sometimes you need some go-to meals to combat all of the holiday eating.
Just Take Me to the Apple, Farro, and Bacon Salad Already!

One of the easiest ways to do this is by eating salads. You can load up your salad with good-for-you veggies and proteins and not bat an eyelash! But we all know that eating salads every day can get a little boring.
That’s why I love this Apple, Farro, and Bacon Salad. The base of the salad, arugula, can handle just about anything you throw on top of it. If you want to make this salad seasonal, swap out the grapes for cranberries and toss in some chopped walnuts for Fall flavors.
To make this easy Apple, Farro, and Bacon Salad, you’ll need:
- Apple Corer
- Knife
- Rimmed Baking Sheet
- 1 1/2 cups farro
- 4 slices bacon
- 2 tbsp red wine vinegar
- Kosher salt and pepper
- 1/2 small red onion, finely chopped
- 2 stalks celery, thinly sliced
- 1 cup red seedless grapes, halved
- 1 crisp red apple, cored and cut into thin 1-inch pieces
- 2 tbsp olive oil
- 1 bunch arugula, thick stems stems discarded
How to Make Apple, Farro, and Bacon Salad:
If you need to cook your bacon, preheat oven to 435°F. Place your bacon in a single layer on a rimmed baking sheet. Roast until crisp, about 12-15 minutes. Crumble and set aside.

In a large bowl, whisk together vinegar and 1/2 tsp each salt and pepper. Add onion and toss to coat and let sit 5 minutes.
Add celery, grapes, and apple. Toss to combine. Next, add farro, drizzle with oil and toss to combine. Fold in arugula and bacon.
Tips for Making Apple, Farro, and Bacon Salad:
- Don’t have an apple corer? Cut your apple in half. Then use a melon baller to scoop out the core!
- You can prep this salad ahead of time by pre-making your farro and bacon. Or use up that leftover bacon from the weekend!
Tips for Making Farro
This is the first time I have ever made farro so I had to do a little research before making it.
You can even freeze extra farro! Just double the amount of farro you need and let it cool completely. Once cool, freeze flat in a Ziploc bag. When you are ready to use it, transfer the frozen farro to a strainer and pour boiling water over it. Now you can use the extra farro in another salad or throw it into a soup!
