Avocado Egg Salad {Plus #Giveaway!}

Sports are in full swing – between football, baseball, and hockey, there are plenty of games to choose from to watch. And since we are in the middle of baseball pre-season, I have lost the battle of the TV.  If your husband is anything like mine, he’s glued to the TV watching {especially when his team was still in the running – Go Pirates!}.

This preseason, green up your game day and hit a home yum—oops, I mean—run! While you are watching the game, you need some game time food and snacks.

One of my favorite lunches is egg salad. Egg salad can a bit boring so you need to spice it up a bit from time to time. This time? I added some diced avocado! Going in, I wasn’t so sure about it , but it’s an amazing combination.   • 2-3 hard boiled eggs {depending on how many sandwiches you are making}
  • 1 avocado
  • yellow mustard to taste
  • 1 tbsp mayo


  1. Peel eggs and slice into pieces.
  2. Pit, peel, and cut avocado into pieces.
  3. Add mayo and mustard.
  4. Mash up with a fork until desired consistency.

  18. I would “green up” my game day by using reusable cloth instead of a paper tablecloth. It is a “green” solution and will stay put better on windy days if you are tailgating before the big game.

  25. Always with the guac for dipping, but also sliced on Mexican sliders and mini quesadillas. I even use guac as a sub for mayo. I’m surprised my skin isn’t tinged green…
