Ingredients

  • 1 tbsp bacon fat
  • 5 slices bacon, crumbled
  • 1 egg, whisked
  • 1 tbsp honey
  • 1 cup flour
  • 1 tsp baking powder
  • 1 cup cornmeal
  • 1/2 tsp salt
  • 1/4 cup butter, melted
  • 1 cup milk
  • 4 oz cheddar cheese, shredded

Instructions

  1. Preheat oven to 400 degrees.
  2. Melt bacon fat in cast iron skillet. 
  3. Whisk dry ingredients together in bowl. Stir in butter, milk, eggs, and honey. 
  4. Gently fold in the bacon and cheese.
  5. Bake in oven for 20 minutes.
