Caesar Salad Bites + Saffron Road Giveaway

This past June, for the second time, I packed my bags and headed to New York City for the Fancy Food Show. This year was even more jam packed with great food and sponsors. We met with some favorites from last year, like Saffron Road, and learned about new products and brands. And, of course, we ate!
Once home, it was time to start thinking about how I can incorporate all of these delicious foods into our every day lives. When it comes to Saffron Road, that’s an easy one. I had the pleasure of learning about their brand last year (and made some really fun recipes!) and I was super excited to see what was new year. And they didn’t disappoint.
Saffron Road, the fastest growing brand of premium frozen entrees, expanded their plant based protein snack line with the addition of new globally-inspired lentil chips and crackers in addition to introducing a USDA Certified Organic Chickpea Snack product.
Let me break this down for you!
Baked Lentil Chips®

Lentil Crackers
The lentil crackers are made with three varieties of lentils from around the world which are carefully baked and lightly seasoned for a guiltless, epicurean indulgence. Lentil Cracker flavors include Sea Salt and Rosemary Herb.
USDA Organic Chickpea Snacks
Saffron Road brings chickpeas to Americans as a nutritiously delicious snack! The chickpeas are cooked to crunchy perfection and flavored with pure sea salt. Each one ounce serving of Saffron Road Chickpea Snacks contains six grams of protein and only four grams of fat.
BeanStalks®
A delicious new snack with a giant crunch, made from nutritious beans! BeanStalks combine green peas, cannellini beans, and pinto beans into one crunch snack! So how am I using them in our every day cooking? Well that’s super easy! For one, the kids are hooked on the BeanStalks. They are perfect for throwing into the pool bag and snacking on after an afternoon of swimming.
But for me, I am in love with the Lentil Crackers. On hot summer days, no one feels like cooking. Dinner either consists of take out, the crockpot, or easy dinners like cheese and crackers. And that gets old fast. Unless you change it up a bit!
Caesar Salad Bites with Caesar Vinaigrette
My all-time favorite salad is hands-down Caesar Salad. It’s quick and easy and filling! I have made my own Caesar dressing once in my life and that was with the help of a chef! I never attempted to make it again until today!
I wanted to make bite size Caesar Salad that would be perfect for a summer party or dinner. It combines my favorite Saffron Road Lentil Sea Salt Crackers with the bite of fresh Parmesan cheese. (You could also use the Garlic and Parmesan Lentil Chips for a bigger bite!) And while Caesar dressing is often thought of being a heavier dressing, I lightened it up as a vinaigrette to this the perfect light summer snack!
To make this lightened Caesar Vinaigrette you will need:
- ¼ cup lemon juice
- ¼ cup extra virgin olive oil
- 2 – 3 tsp minced garlic
- 1 tablespoon anchovy paste
- 2 teaspoons Dijon mustard
- ½ teaspoon salt
- ¼ teaspoon pepper
The recipe couldn’t be easier! Whisk all ingredients together until thoroughly combined! Use immediately or refrigerate for up to a week! Make sure you shake well before using again.
Caesar Vinaigrette
Ingredients
- ¼ cup lemon juice
- ¼ cup extra virgin olive oil
- 2 - 3 tsp minced garlic
- 1 tablespoon anchovy paste
- 2 teaspoons Dijon mustard
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Whisk all ingredients together until thoroughly combined.
- Use immediately or refrigerate for up to a week! Make sure you shake well before using again.
Now that your dressing is made, it’s time to assemble your Caesar Salad Bites! Mix your dressing into chopped Romaine Lettuce. Make sure you go light on the dressing!
Top a Saffron Road Lentil Chip with a pinch of the salad mixture and freshly shaved Parmesan Cheese!

This is the first time that I have heard about Saffron Road products so I went to their website to check them out. The first thing that came up was their new fish bowls. The lemongrass basil fish looks yummy. Then I checked out the snacks. The baked lentil chips come in some great flavors. It would be hard to pick just one to try. They also have mini dessert tarts. The chocolate coconut cheesecake would be the first one to try.
I like the frozen entrees. They have a Manchurian dumplings entree that I would like to try.
