The Essex Resort & Spa’s Caesar Salad
During our fun family getaway at the Essex Resort and Spa, Ethan and I had a chance to take one of their cooking classes. Just the two of us. It was a great chance for us to have some one-on-one time.
We headed down to the J.K. Adams kitchen where we were greeted by Chef Brandy. We were given chef hats {which Ethan of course refused to wear} and our aprons. We were ready!
I swear he was excited just a bit tired!
Our goal for the class was to make a three course meal: Caesar Salad, Fresh Made Pasta with a Tomato Basil Sauce, and dessert, Molten Chocolate Cake.
Today, I am going to share with you our first course: Caesar Salad.
Caesar Salad
Ingredients
- 3 anchovy fillets
- 1 glove garlic, crushed or pressed
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon Worcestershire sauce
- 1 raw egg, or 1 tablespoon Dijon mustard or 1 1/2 tablespoons of mayonnaise
- 1/3 cup canola oil or canola/olive oil blend
- Freshly ground black pepper
- Sea salt to taste
- 3 hearts Romaine lettuce, washed, dried, and chopped into bite-sized pieces
- 1/2 cups Parmigiano Reggiano cheese, freshly grated or shaved
- 2 cups croutons
Instructions
- Place anchovies, garlic, and lemon juice into a bowl.
- Mash and pull apart with 2 forks until it forms a paste.
- Add Worcestershire sauce, egg, and pepper and mix well.
- Slowly drizzle in oil while whisking continuously. Taste to season with salt and pepper.
- Add prepared lettuce leaves, cheese, and croutons to the bowl. Toss well.
