This quick and easy grilled chicken dinner has all of the flavors of a caprese salad. Grilled chicken is topped with fresh mozzarella, ripe tomatoes, and plenty of basil!

One of my favorite things about summer is grilling! We use the grill a lot not only during the summer months but pretty much a year long. From burgers to ribs to chicken, we do it all!
This summer, I branched out beyond the standard barbecue chicken. Don’t get me wrong, I love barbecue but I also like to switch it up a bit. I do this by marinating my chicken in different marinades. My current favorite? Marinating in balsamic vinaigrette.
The key to any good grilled chicken is the chicken itself and the marinade. For this Caprese Balsamic Grilled Chicken, I used Open Nature® Boneless Skinless Chicken Breasts. I love using Open Nature® because it offers premium grass-fed, free range and natural beef that is vegetarian-fed and free of antibiotics or added hormones. It’s a key ingredient for the perfect grilling entrée.
For the marinade, I used O Organics® Balsamic Vinaigrette. The chicken marinated in the balsamic vinaigrette overnight adding a ton of flavor before being grilled which adds an amazing smokiness.
Caprese Balsamic Grilled Chicken
- 4 Open Nature® Boneless Skinless Chicken Breasts
- ½ cup O Organics® balsamic vinaigrette
- 8 ounce fresh mozzarella ball, sliced
- 1 ripe field tomato, sliced
- ¼ cup basil, sliced
- ¼ cup balsamic reduction
- Marinate the chicken in the balsamic vinaigrette overnight.
- Grill the chicken on medium-high heat until cooked and slightly charred, about 2-4 minutes per side before topping with the mozzarella and tomato and letting it heat until it just starts to melt.
- Serve topped with the basil and balsamic reduction.
