Caprese Balsamic Grilled Chicken
This quick and easy grilled chicken dinner has all of the flavors of a caprese salad. Grilled chicken is topped with fresh mozzarella, ripe tomatoes, and plenty of basil!
One of my favorite things about summer is grilling! We use the grill a lot not only during the summer months but pretty much a year long. From burgers to ribs to chicken, we do it all!
This summer, I branched out beyond the standard barbecue chicken. Don’t get me wrong, I love barbecue but I also like to switch it up a bit. I do this by marinating my chicken in different marinades. My current favorite? Marinating in balsamic vinaigrette.
Caprese Balsamic Grilled Chicken takes its inspiration from the traditional Italian Caprese salad, which combines tomatoes, mozzarella cheese, and basil leaves drizzled with olive oil. This grilled chicken variation adds a protein-packed twist to the classic flavors, making it a satisfying and wholesome main course.
The combination of the smoky grilled chicken, the sweetness of ripe tomatoes, the creaminess of fresh mozzarella, the herbaceous notes of basil, and the tangy balsamic glaze creates a harmonious blend of tastes and textures that will leave your taste buds craving for more.
Key Ingredients for Caprese Balsamic Grilled Chicken
To create the perfect Caprese Balsamic Grilled Chicken, you will need the following key ingredients:
- Chicken Breasts: Choose boneless, skinless chicken breasts for convenience and easy grilling. Ensure they are of good quality and uniform in thickness to ensure even cooking.
- Ripe Tomatoes: Opt for ripe and juicy tomatoes, such as Roma or vine-ripened tomatoes, as they provide the perfect balance of sweetness and acidity.
- Fresh Mozzarella: Look for fresh mozzarella cheese in the deli section or specialty cheese aisle. It should be soft and creamy with a mild flavor.
- Fresh Basil: Use fresh basil leaves for their fragrant aroma and vibrant green color. Tear the leaves or thinly slice them for added freshness.
- Balsamic Glaze: A rich and tangy balsamic glaze adds depth and complexity to the dish. You can either purchase a pre-made glaze or make your own by reducing balsamic vinegar with a touch of honey or sugar until thickened.
Tips for Perfectly Grilled Caprese Balsamic Chicken
To ensure your Caprese Balsamic Grilled Chicken turns out succulent and full of flavor, consider the following tips:
- Marinate the Chicken: For extra flavor and tenderness, marinate the chicken breasts in a mixture of olive oil, balsamic vinegar, garlic, and Italian herbs for at least 30 minutes before grilling.
- Pound the Chicken: To ensure even cooking, pound the chicken breasts to an even thickness before grilling. This helps them cook more uniformly and prevents dryness.
- Preheat the Grill: Make sure your grill is preheated to medium-high heat before adding the chicken. This ensures proper searing and prevents sticking.
- Keep a Close Eye: Grill the chicken breasts for about 6-8 minutes per side or until the internal temperature reaches 165°F (74°C). Overcooking can result in dry chicken, so keep a close eye on them.
- Let it Rest: Allow the grilled chicken to rest for a few minutes before topping it with the Caprese ingredients. This helps the juices redistribute and ensures juicy and tender meat.
