Now that we are in my family’s peak busy season, I am always looking for recipes that are versatile and don’t take a lot of time. One of the things that I currently struggle with is breakfast.

To be honest, our breakfasts can be a little boring.  Most mornings, especially weekends, we are in a rush to get out the door on time which makes it easy for us to fall in a rut. I typically grab a cup of coffee. The boys? Cereal. And when you are trying to fuel them for long days on the baseball field, it’s not going to cut it.

When trying to come up with breakfast ideas, I need something that can be made quickly (or even ahead of time) and is grab and go. These Cheesy Ham Buttermilk Biscuits fit the bill!

Smithfield Anytime Favorites Cubed Ham is the perfect protein boost for your morning meal. Add pre-diced, cubed or sliced ham into eggs, waffles, or as a side with your toast to kick start your morning or end your day on a high note. This line of ham has the legendary Smithfield taste without having to prepare a full spiral ham.

Choose from 20 different cuts of Anytime Favorites – including sliced, diced, chops and steaks – for an ideal solution for a breakfast reimagined—kind of like these Cheesy Ham Buttermilk Biscuits.

Not only are these Cheesy Ham Buttermilk Biscuits great for breakfast, they can be eaten any time of the day! From brunch to lunch to even dinner! You can even “reimagine” them as a snack. They are perfect anytime of the day!

Ways to reimagine your Cheesy Ham Buttermilk Biscuits:

Make a southwestern inspired biscuit by adding diced pepper, onion, and use Colby Jack cheese.

Or pack your biscuits with spinach and swap out the cheddar for mozzarella cheese! Don’t forget the ham.

If you really wanted to shake things up, set up a biscuit bar where everyone can pick and choose their add-ins. Simply add in their favorites and cut out a few biscuits for each combination!

Prep Time 10 minutes

Total Time 26 minutes

Ingredients

  • 8 oz cheddar cheese, shredded
  • 2 1/2 cups self-rising flour
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1/2 cups + 2 tbsp cold, unsalted butter, divided
  • 1 cup Smithfield diced ham
  • 3/4 cup buttermilk

Instructions

  1. Preheat the oven to 450° F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, combine the flour, salt, and sugar. Add ½ cup of the cold butter to the flour mixture and use a pastry blender to cut the butter into pieces about the size of peas.
  3. Stir in the cheese and ham and mix well to combine. Pour about ¾ cup of buttermilk into the bowl and mix well. If the dough is still too crumbly, gradually add more milk to get it to the point there you can roll it out, but not too sticky.
  4. Turn the dough out onto a floured surface. Sprinkle some additional flour over the dough. Knead the dough lightly being sure to fold it over on itself three to four times. Gently roll or pat the dough to about ¾-inch thick.
  5. Use a 2½" to 3" biscuit cutter to cut the biscuits by pressing strain down to cut them. Take care to not twist the cutter. Use a straight up and down motion. Transfer the biscuits to the prepared pan. Rework the dough and continue to cut biscuits until all the dough has been used.
  6. Melt the remaining 2 tablespoons of butter and brush the tops of each biscuit. Bake 14 to 16 minutes, or until golden brown. Serve warm.
