We were at the local Italian bakery this morning and I was eyeing up the pastry display. I called it research. There were so many cookies and pastries that brought back family memories.
Butter cookies are a staple on an Italian cookie tray. While it may seem like such a simple cookie, they are a tried and true cookie and everyone has their variation on the recipe.
These cookies are like a very sturdy shortbread but with an extra crispy texture. They are just screaming to be dipped in chocolate.For the holidays, I like to dip my butter cookies in melted cookie and decorate with sprinkles or crushed nuts.
This butter cookie recipe is so versatile you can make it all year round!
TO MAKE THESE Chocolate Dipped Butter Cookies, you will need:
- stand mixer
- cookie scoop
- fork
- 1 cup butter, softened
- 1/2 cup confectioner’s sugar
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 cup chocolate melting wafers
- sprinkles
HOW TO MAKE Chocolate Dipped Butter Cookies
In a stand mixer, cream butter and sugar together. Add vanilla extract and mix well. Gradually add flour. Cover and chill dough for 1 hour.
Shape tablespoonfuls of dough into 2 1/2 inch x 1/2 inch sticks. Place 2 inches apart on ungreased baking sheet. Flatten about three-fourths of each stick lengthwise with a fork.
Bake at 350 F until set, about 14-16 minutes. Cool on baking sheets.
Melt chocolate until smooth. Dip the round end of each cookie. Top with sprinkles. Place on waxed paper until firm.
Tips for making Chocolate Dipped Butter Cookies
- Try forming your cookies into different shapes like circles!
- Add some coconut oil in your chocolate to help it melt and keep it smooth.
- Skip the sprinkles and topped with crushed nuts like pecans or walnuts.
- If you want more refined look, skip hand forming them! Instead of chilling the dough for an hour, scoop into a piping bag. Using a large star tip, pip your cookies in either logs or circles.
