Dipped Wafer Pencil Cookies
Dipped Wafer Pencil Cookies are a simple and easy back to school treat!

We are just weeks away from the first day of school! Can you tell I am just a tad bit excited? The boys? Not so much. We’ve had a great summer so far and I am not trying to rush it or anything. But I am looking forward to getting back into our much needed routine.
I always try to make the first day of school fun and exciting for the kids. First, their dad takes off and stays home to see them off on the first day. This is a big deal to them and they look forward to it every year. We also have fun taking first day of school photos and I always have a fun treat waiting for them when they come home.
This year, I decided to get have a little fun with some Loacker wafer cookies. These dipped wafer pencil cookies are super simple and easy to make.
Dipped Wafer Pencil Cookies
To make these dipped wafer pencil cookies, you will need:
- (1) package of Loacker wafer cookies (I used the lemon flavor)
- Chocolate Chips
- White and Pink Melting Chocolates
Start by melting your white and pink melting chocolates separately in the microwave by following the instructions on the package. Be careful to not to over melt them! While they are melting, cut one end of your Loacker wafer cookies into a point.
Next, dip the flat end into the pink melted chocolates (this is your eraser). And then the pointed end in the white melted chocolate.
Add a chocolate chip to the point to complete your dipped wafer pencil cookies!
Let your dipped wafer cookies cool and enjoy with the kids when the come home from school!

When my kids were in school we would always have pancakes for the first day. They looked forward to that.
Usually my daughters in law go out on a shopping trip and I go with them while my grand kids are in school.
We started with a lovely new outfit, of course, which I used to pick out. We snapped a picture of my daughter with her new gear on at home, and then later got a shot in the schoolyard.

I always pick the kids up the first day of school and take them for ice cream. It’s a great way to sit down and talk about the day before we come home and they dump a billion papers on me to fill out and things more to get lists.
