Well, my friends, I am in the throes of our new fall schedule. Almost every single day we have something going on, except Fridays. Each day, we go from school to activities to appointments and before I know it, it’s the weekend and the craziness doesn’t stop there. This means we have little time for dinner. Scratch that. I have little time to cook dinner. I have been relying on quick and easy effortless meals, like this Southwest Chicken Bake or Cheeseburger Macaroni to get us through the week.
One of the shortcuts I use during these busy weeks is a rotisserie chicken. I try to buy one or two a week and use the shredded meat as the bulk of my dinner. This saves me time from having to stand in the kitchen and actually cook the chicken. It’s really easy to create a meal around it quickly, especially for us busy parents that are on-the-go.

How to Make BBQ Chicken Nachos
You’ll need a rotisserie chicken (shredded), cheddar and mozzarella cheese, nacho chips, and sweet bbq sauce.
In a cast iron skillet, start layering your nachos: chips, cheese, chicken, bbq sauce, and a little more cheese.
After two layers, you are ready to pop your nachos in the oven! Cook at 350 degrees for about 10 minutes or until cheese is melted.
Be careful taking your cast iron skillet out of the oven. It will be really hot!
