Food Should Taste Good: Shredded Chicken Nachos
Sundays mean one thing in my house: Football. And with football comes snacking all afternoon. We have our go-to snacks, the classics that pair perfectly with an afternoon of watching football games.
One of our all time favorite snacks is nachos. There are so many ways you can prepare them: with just cheese, topped with chili, shredded chicken. The possibilities are endless and we love coming up with new combinations. Not only do we enjoy nachos for snacking, it can easily be a quick and easy dinner.
My absolute favorite nachos are the ones topped with shredded chicken and lots of cheese! Since I usually do our grocery shopping on Sundays, I grab a rotisserie chicken that’s easy to shred and can be used throughout the week. Assembling the nachos couldn’t be any more easier.
I also changed up our usual tortilla chips with the Multigrain Tortilla chips. I have been reaching for them lately, including adding them crushed on my Crunchy BBQ Ranch Chicken salads.
Shredded Chicken Nachos
Ingredients
- 2 cups shredded chicken (I used a rotisserie chicken)
- 2 cups of your favorite shredded cheese (we love cheddar!)
- Food Should Taste Good Multigrain Tortilla Chips
- toppings: diced tomato, sliced olives, lettuce, sour cream (optional)
Directions:
Pre-heat oven to 350 degrees. Then, spread your Food Should Taste Good Tortilla chips in a thin layer on cookie sheet.
Sprinkle 1 cup of cheese on chips. This will help your chicken (or chili) to stay on the chips.
Next, add your chicken!
Layer with the remaining cheese and your toppings.
Bake in pre-heated oven for about 10 minutes or until cheese is melted. Don’t leave it too long or the cheese will burn (don’t ask I how I know!).
