Frozen Greek Yogurt Bars

We are about 2 weeks into our summer and we have hit the point where it seems like we are invited to some type of party or celebration every week. Fourth of July. Birthdays. Weddings. And let’s not forget our weekly standing Friday Deck Night with our Neighbors. You name it and we probably have it on our calendar.

Whether I am hosting or an invited guest, I always feel like I need to bring something: an appetizer, dessert, wine. Something! I hate showing up empty handed. I have a few go-to recipes that never fail me but from time to time, I like to switch things up a bit.

I have been trying to sneak in some healthy swaps for my family and so far it’s been going really well. No one has really noticed and, more importantly, no one has complained! I call that a win in my book. So when it came time for me to come up with a new dessert idea for an upcoming party, I figured I might as well attempt a new swap!

One of our biggest indulgences in the summertime is ice cream. And when you are trying to lose weight or stay on track, it can easily help you get derailed. But what if I could make a simple swap, make my own “ice cream” and everyone be happy?

I knew you could turn Greek Yogurt into ice cream fairly easily so I thought I would give this a try. Since we were having friends over for our weekly get together, I thought it was no time like the present to try out this recipe. I wouldn’t have to worry about it melting while transporting it to someone else’s house. And since I can’t just make ice cream and call it a day, I had to get a little fancy. But don’t worry, these Frozen Greek Yogurt Bars will take you all of about 5 minute to whip up! No slaving away in the kitchen.

The best thing about making your own ice cream with Yoplait Greek Yogurt is that you can take your plain yogurt and turn it into anything you want. Add some chocolate or berries or come up with an off-the-wall flavor. For this recipe, I grabbed the Yoplait Greek Strawberry Cheesecake Yogurt. Yeah, you can see where this one is going.

All you need to do is combine the Yoplait Greek Yogurt of your choice and thawed whipped topping. If you want to add any other flavors to your yogurt, now’s the time to do it. Melt your butter and combine with crushed graham crackers. Press down in a lined 8×8 dish. I used wax paper for mine. Top with your yogurt mixture and freeze!

You will have to let it sit out for a bit before serving. Running my knife under hot water helped me cut through the bars. I topped mine with sliced strawberries! Serve and eat immediately before they melt!

Frozen Greek Yogurt Bars

Ingredients

  • 16 oz YoPlait Strawberry Cheesecake Greek Yogurt
  • 1 c whipped topping
  • 1 cup crushed graham crackers
  • ⅓ c melted butter

Instructions

  1. Let the whipped topping thaw slightly, then combine with yogurt and mix until well combined.
  2. Mix melted butter and crushed graham crackers. Press crust mixture into the bottom of a wax paper lined pan.
  3. Top with yogurt mixture and freeze.
  4. Cut into squares and serve.
