It’s so easy to overlook a salad when the day is all about a turkey, homemade stuffing, creamy mashed potatoes, veggies and pumpkin pie. I mean, I’m making myself hungry just thinking about it!

What I love most about this salad is the crunch! Between the fresh honeycrisp apples and the chopped walnuts, there is literally a crunch in every bite. And, I will admit, I tend to lean towards the sweet side when it comes to food so that is where is the sweet and tart craisins come in.

You can top your Fruity Nutty salad off with cheese crumbles like feta, bleu cheese, or gorgonzola. But you don’t need a lot since they tend to overpower a dish. If you are looking to add some more protein to your salad, go ahead and throw in some grilled chicken. This salad can totally stand alone without dressing but if you need it, balsamic vinaigrette works well.

A recipe for a fruit, nut and crumbled cheese salad over mixed greens with balsamic vinaigrette!

Ingredients

  • 1 cup mixed greens
  • 1/8 cup Craisins
  • 1/8 cup chopped walnuts
  • 1/8 cup feta cheese
  • 1 honeycrisp apple
  • 2 tbsp cup balsamic vinaigrette

Instructions

  1. Wash greens and place in large bowl.
  2. Top with craisins, walnuts, sliced apples, and cheese.
  3. Drizzle with balsamic vinaigrette.
