Graham Cracker Eclair is an easy dessert to whip up and can be made the night before. It’s amazing what you can do with a little thawed whipped cream, graham crackers, and pudding.
Now that the weather is getting warmer, I am thinking about summer gatherings. And with summer gatherings comes summertime food. Whenever we get together with friends and family, everyone pitches in. Someone brings the salad. Someone brings the fruit. I bring the dessert. I have a few go-to recipes that I always make during the summer. But the number one requested dessert is the Graham Cracker Eclair.
I can’t take all the credit for stumbling on this post. My sister was kind enough to pass it along to me after everyone drooled over it one night. I snatched that recipe right up and now people are asking me for it. And I happily give it to them.
Not only is it delicious, it’s one of the easiest things I have ever made. That gets a good star in my book! It’s the perfect dessert for a special occasion or an everyday treat!

Graham Cracker Eclair
Ingredients
- 1 pkg., 3.4 oz. Vanilla Flavor Instant Pudding
- 1-1/2 cups cold milk
- 1 tub, 8 oz. COOL WHIP Whipped Topping, thawed
- 1 tub of icing {chocolate, vanilla, or your favorite flavor}
Instructions
- Place 10 graham cracker squares on the bottom of an 8-inch pan.
- Beat pudding mix and milk in a large bowl with a wisk. Let stand for 5 minutes to thicken. Fold in thawed COOL WHIP.
- Spread half of the pudding mixture over the graham squares in the pan. Top pudding with 10 more graham squares.
- Repeat layers.
- Refrigerate for 3 hours to set.
- Before serving, place tub of icing in microwave for 30 seconds. Pour over eclair.
- Refrigerate for 30 minutes or until icing is hard.
