Lingonberry Blueberry Toaster Strudel

Next to school lunches, I’d say school morning breakfasts can be a headache. Of course, the kids would grab cereal and call it a day, but I like to make sure they have something that will fill them up and keep them going until lunch.
There are so many grab and go breakfasts but they aren’t always the healthiest. But you can make a lot of them at home if you just give yourself a little time.
Homemade toaster strudels are quick and easy and can be made to suite any one’s favorite flavors! All you need are sheets of puff pastries and your choice of jams, like Felix Jams.
As familiar as Volvo, Ikea and Swedish meatballs, Felix has been bringing Swedish Lingonberries to the American table for over 50 years. This delicious tart-sweet jam is made out of pure, simple ingredients: wild lingonberries, sugar and water, with no artificial ingredients or preservatives.
Enjoy the original Lingonberry flavor or new Lingonberries with Blueberries or Ginger in your favorite recipes, or on waffles, pancakes, cheese, sandwiches, and as a great alternative to cranberries with ham, turkey or game.
Lingonberry Blueberry Toaster Strudel
To make this Lingonberry Blueberry Toaster Strudel, you will need:
- 1 box frozen puff pastry dough (in sheet form), thawed
- Felix Jams – I used Lingonberry with blueberry
- 1 egg
- 1 tbsp water
Pre-heat oven to 400 degrees. Unfold pastry sheets and cut along the creases to create 3 strips of dough. Cut each strip in half so you have 6 rectangles.
On one rectangle, gently spread 1 tbsp of jam in the center. Make sure you leave a border.
Top with another rectangle. Pinch closed with a fork to create an enclosed pocket. Repeat.
Place on a parchment or silicone lined baking sheet. Beat the egg with 1 tbsp of water in a small bowl. Brush the tops of the pastries with the egg wash. Bake for 15 minutes until puffed up and a golden brown.
