Mini Chocolate Cherry Cheesecakes
Finally, I am in the holiday spirit! The tree has been trimmed, the stockings have been hung. We are in full on Christmas mode! You know what comes next?
BAKING!
I love to bake…especially during the holidays! There are so many things to make. And they look pretty. And they are tasty! We bake cookies (tons of them!) but this year, I wanted to step up my game.
I have never dared to make cheesecake. Not even a no bake cheesecake. I don’t know why. I guess I have always been intimated by it. That was until a friend shared her recipe for the easiest cheesecake ever.
I promise you. This is going to be the easiest cheesecake recipe you made. Pinky promise!
Mini Chocolate Cherry Cheesecakes
First, gather all of your ingredients. This is going to be a crustless cheesecake. Sort of. We will be using Dark Chocolate Morsels with Cherry Flavored Filled Nestlé Toll House DelightFulls™ Baking Morsels.
Next, throw everything into the blender (minus the morsels).
Blend ingredients until they are incoporated together, about 5-7 minutes.
While everything is in the blender, place the Baking Morsels in the bottom of a greased cupcake pan. You can use liners or place it right into the pan. I decided to use my silicon liners because I was afraid it would stick to the pan, even though it was greased.
Pour your batter on top of the Baking Morsels. Make sure you leave a little room on the top.
Now they are ready for the oven! Bake at 350 for about 15-20 minutes. Make sure you keep an eye on them. You want to pull them out of the oven before they get brown on the top! When you are ready to serve them, remove the liners (if you used them) and top with some cherry pie filling!

- Dark Chocolate Morsels with Cherry Flavored Filled Nestlé Toll House DelightFulls™ Baking Morsels
- 2 blocks cream cheese
- 1 cup sugar
- 1 cup milk
- 2 tablesppons corn starch
- 1 tsp vanilla
- 4 eggs
Instructions
- Blend all ingredients in the blender for 5-7 minutes.
- Pour into greased cupcake pan (with or without liners).
- Bake at 350 for 15-20 minutes, until settled and before top is browned.
