Mozzarella Caprese Bites

I made the mistake of looking at my planner the other day. You know what I saw. Baseball practice here. Soccer games there. PTA meetings all over. Things are about to get crazy busy around these parts, but before they do, I want to share a snack hack that’s going to give me time to breathe and still feed my family. Keep reading, because there’s a contest to help you breathe easier too. Oh, and, if I am being honest, I wouldn’t really change a thing about my life!
Even though we are going to be crazy busy, we still have to squeeze in family dinners and get togethers. Being around family is really important to us and jammed packed schedules are no excuse not to get together. In fact, it actually helps bring everyone together from after games dinners to pre-game breakfasts.
Growing up Italian, we always had some antipasto and fresh mozzarella as snacks and appetizers. Somehow no matter how busy my family is, there is always food on the table. What can I say, we like to feed everyone! And I am not one to start breaking that tradition.
Since I don’t have a lot of time on my hands to make elaborate recipes, I have come to rely on snack hacks. Using snacks as meals that combine convenience products with fresh, I can stay out of the kitchen and spend more time with my friends and family.
Mozzarella Caprese Bites
To make this simple snack, pick up Farm Rich Mozzarella Bites, cherry tomatoes, and fresh basil the next time you are shopping at WalMart. If you don’t have wooden skewers at home, grab them too!
Bake your frozen Farm Rich Mozzarella Bites at 375 degrees for 9-10 minutes (half box) or 12-13 minutes (full box) . While your mozzarella bites are baking in the oven, rinse your cherry tomatoes and get your basil leaves ready.
When the Mozzarella Bites are done, assemble your caprese bites. Using a wooden skewer, start with one mozzarella bite…
then one cherry tomato.
Top with a fresh basil leaf.
In just 20 minutes, you have snack or appetizer that will be a real crowd pleaser (and you didn’t have to spend all day in the kitchen!).

This is a GREAT snack hack. One of my favorite snack or appetizer combinations. Now I have to try it with the mozzarella bites.
I make these all the time and have never thought to bake the mozzarella balls!! Genius!! I would add pepperoni or proscutto to spice it up 😉
