Keeping my Word of the Year {Better} in mind means that I am making little changes in my daily life. One of those changes is eating better. Most days, I slug a cup of coffee in the morning {ok, maybe it’s two} and skip breakfast. Then I run around getting lunch ready for the kids and fly out hte door to do the school drop off. When I get back, I coral Ben down for a nap and then it’s finally time for me to eat.
That’s right. I haven’t eaten a single thing until almost 1 pm. You’d think that that would work wonders on the scale but it doesn’t. It does the opposite. It makes me shove all the food in the house in my mouth come lunch time because I am so damn hungry.
So, I am putting an end to that. Not eating is a really bad habit that I picked up and I need to break it. One way I am doing this is to make sure I have healthy lunch options in the house. When I go grocery shopping, I worry about getting lunch supplies for the kids but not for myself. That leaves me with chicken nuggets, macaroni and cheese, and PB&J as my lunch options.
Not anymore! I loaded up some great lunch options for myself this week at the grocery store: salad, fruits and veggies, and Naan.
Naan?
Yes, Naan.
This is the first time I have ever picked up a piece of Naan in my life but I saw so many possibilities. Paninis. Pizzas.
And that’s exactly what I did! I threw together a Naan Margherita Pizza for lunch and it was so yummy! Super easy. On plan. In my belly.
Naan Margherita Pizza
Ingredients
- 1 tsp Extra Virgin olive oil
- 1 piece of naan
- 1 String Cheese Stick
- Handful of Grape Tomatoes
- Fresh Basil
Instructions
- Heat oven to 500.
- In a medium pan heat oil on medium high. Add sliced grape tomatoes and a few slivers of fresh basil. Remove from heat when tomatoes start breaking down.
- Top naan with with tomatoes and drizzle the oil left in the pan over the pizza. Add slices of String Cheese.
- Place on a cookie sheet and bake for 5-10 minutes or until the naan is lightly crisp.
