✔ Dressing made with olive oil, red wine vinegar, garlic, salt, and pepper
NOW THAT YOU HAVE YOUR COOKING ESSENTIALS, YOU ARE READY TO MAKE THIS EASY RUSTIC PASTA TOSS WITH TUNA & TOMATOES!
- 2 packages Blue Harbor Tuna Co
- 1 lb pasta, your choice
- 1 medium zucchini, quartered
- 1 medium yellow squash, quartered
- 1 pt cherry tomatoes, quartered
- 1/2 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 clove garlic, minced
- salt, to taste
- freshly ground pepper, to taste
- Heat large covered sauce pot of salted water to boiling on high. Add pasta; cook as directed.
- While pasta is cooking, trim zucchini and squash, cut into quarters lengthwise, then cut into thin slices crosswise. Quarter tomatoes.
- In large bowl, whisk vinegar, oil, garlic, salt, and freshly ground black pepper. Stir in tomatoes.
- Drain pasta. Add to tomato mixture along with tuna, zucchini, and squash. Toss until well mixed.
