Rustic Pasta Toss with Tomatoes & Tuna
This Rustic Pasta Toss is loaded with farm-stand fresh squash, zucchini, and tomatoes. Just combine the raw veggies with tuna and pasta for a light and fresh meal!
Ingredients
- 2 packages Blue Harbor Tuna Co
- 1 lb pasta, your choice
- 1 medium zucchini, quartered
- 1 medium yellow squash, quartered
- 1 pt cherry tomatoes, quartered
Dressing
- 1/2 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 clove garlic, minced
- salt, to taste
- freshly ground pepper, to taste
Instructions
- Heat large covered sauce pot of salted water to boiling on high. Add pasta; cook as directed.
- While pasta is cooking, trim zucchini and squash, cut into quarters lengthwise, then cut into thin slices crosswise. Quarter tomatoes.
- In large bowl, whisk vinegar, oil, garlic, salt, and freshly ground black pepper. Stir in tomatoes.
- Drain pasta. Add to tomato mixture along with tuna, zucchini, and squash. Toss until well mixed.
