Sea Salt Caramel Chocolate Chunk Cookies
Sea Salt Caramel Chocolate Chunk Cookies are a brown sugar cookie dough with chunks of dark chocolate and caramel. A crisp edge, chewy, gooey caramel middle with melted dark chocolate chunk cookies.

This may be my favorite cookie of this year’s 12 Days of Christmas Cookies! Caramel. Sea Salt. Dark Chocolate Chunks. What’s not to love? These cookies take all of the best things and smashes them into one cookie.
These are large cookies so they look like they came out of a fancy bakery or coffee shop. They make great gifts as well! Wrap them up with some bakers twine and place in cookie bag. Don’t forget to include the recipe!
These cookies are the best right out of the oven and don’t really last much longer than that! Everyone gobbles them right up! But if they do last a few days, you can pop them in the microwave for a few seconds to warm them up.
TO MAKE THESE Sea Salt Caramel Chocolate Chunk Cookies, YOU’LL NEED:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 stick soft unsalted butter
- 1/2 cup dark brown sugar
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 egg
- 1 3.5 oz dark chocolate bar
- baking caramels
- Flaked sea salt

Tips for Making Sea Salt Caramel Chocolate Chunk Cookies
- Use a good dark chocolate bar that is at least 70% cacao. Do not skimp and use chocolate chips! They won’t melt the same.
- Line your baking your sheet with parchment paper! You want to do this, especially with these cookies. The caramel may ooze out a bit and will stick to an unlined baking sheet.
- Let your cookies cool on the parchment for at least 3 minutes before placing on a cooling rack.
- Don’t worry if you don’t have sea salt! You can skip the sea salt flakes.

Sea Salt Caramel Chocolate Chunk Cookies
Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 stick soft unsalted butter
- 1/2 cup dark brown sugar
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 egg
- 1 3.5 oz dark chocolate bar
- baking caramels
- Flaked sea salt
Instructions
- Preheat the oven to 350 degrees F. Line a large baking tray with parchment paper.
- In a small bowl combine the flour and baking soda.
- Using a stand mixer, beat the butter and both sugars until creamy. Add the vanilla and the egg, mix to combine. Gradually add the flour with the mixer on low and mix just until the dough comes together. Stop mixing.
- Chop the chocolate bar roughly with a sharp knife and add to the cookie dough.
- Smash the caramel candies while they are still in the wrapper and then open them placing the broken pieces into the cookie dough.
- Mix on low for about 20 seconds, just to combine the chocolate and caramel through the dough.
- Place the dough and mixing bowl in the freezer for 10 minutes. Using a cookie scoop, roll dough into a ball and place on your prepared tray.
- Leave enough room around each cookie (about 2 inches).
- Bake for 13 minutes and then sprinkle some flaked sea salt on top of each cookie when they come out of the oven.
- Let cool for 5 minutes before moving them to a wire rack and continuing with any remaining dough.
