I am holding onto the last bits of summer! The easiest way to do this is with your favorite summer foods.
And it doesn’t get any more summer than with a fresh summer salad! This Spinach Strawberry and Walnut Salad with Creamy Raspberry Vinaigrette is hands down my favorite salad ever.
It’s easy to throw together. It’s packed with greens that will keep you full. And it just screams summer!
This salad is a classic and you will find a million recipes for it. I like to twist this salad in a few ways.
One, while I love a standard vinaigrette, I also like to turn them into a creamy dressing. You can do this by combining your favorite vinaigrette with plain Greek Yogurt. It’s super simple: a simple one-to-one ratio of Greek Yogurt to vinaigrette.
I also like to add chicken to my salad for protein. I always buy a rotisserie chicken at the grocery store so I can easily throw it into salads and casseroles.
Another way I like to spin this salad is by preparing it in a Mason Jar. You can make a few of these on Sunday night and have them ready for the week. There are a few things you have to remember when making a salad in a jar.
Tips for making a salad in a jar:
- First, you can want to add your dressing to the bottom of the jar. Why? When you empty the salad on to a plate, the dressing will come out last and top your salad.
- Next, you want to add your proteins, like chicken.
- Your next layer should be anything hearty. In this case, this would be when you add your walnuts. The walnuts create a barrier between your protein and greens.
- Next, stuff in your greens. You will be amazed at how many greens you can cram into a mason jar.
- Finally, top your salad with an delicate veggies or fruits, like these strawberries.
