Star Wars: The Cupcakes Awaken

You guys. We saw Rogue One: A Star Wars Story this past weekend and O.M.G. It was so good! I cried, I laughed, I cried some more. And then, because why not, there was a Star Wars marathon all weekend. Which made me remember these Star Wars Cupcakes I made last year to celebrate The Force Awakens.

I will admit, that I was never a Star Wars fan growing up. In fact, I didn’t see the movies until a few years ago. Shocking I know. And I have my children to thank for that one. My oldest was hooked from the moment the opening credits rolled. His little brother has been singing the theme song since he started to talk.

It’s ingrained in them. While my love for Star Wars is new, it’s all because of their love for the movies. To see them so excited about it. To see their father get excited right along with them. My favorite thing when we go to see the new movies is to see everyone’s reactions. I sit between the little boys and the big boys (my husband and his brother) and watch all of their reactions throughout the movie.

For the cupcake batter, you will need, 2 1/4 cups cake flour, 1 cup milk, 6 large eggs white, 1 teaspoon vanilla extract, 1 3/4 cups granulated sugar, 4 teaspoons baking powder, 1 teaspoon salt, and 1 1/2 sticks of unsalted butter.

Start by mixing the milk, egg whites, and vanilla together in a medium bowl until blended. Set aside.  Next, mix together your cake flour, sugar, baking powder, and salt in a large bowl. Cut the butter into cubes and add to the bowl. Mix well with an electric mixer for about 2 minutes until the butter is combined. Add the milk mixture and beat for another 2 minutes on medium speed.

After your cupcakes are done, let cool. Once cool, you are ready to make your Star Wars Cupcakes. Gather your supplies. You will need Cookie Crisp and Cinnamon Toast Crunch Cereal (crush in food processor), vanilla and chocolate frosting, and edible eyes.
